Eggs and Bacon Steel Cut Oats

Steel cut oats have so many uses, they can be savory or sweet, breakfast or dinner. I tend to lean towards the sweet side when it comes to any type of oat. I have a sweet tooth like no other so it gets me in trouble a lot!

I tried the steel cut oats with a poached egg and lots of bacon, lets just say I am a fan! I will only eat eggs with a runny yolk, otherwise I hate eggs. I also only buy eggs that are from pasture raised chickens. It is a little more expensive but worth it. I like my chickens to have a good life and be able to roam and eat bugs the way they should!

One of the first things I learned in culinary school included properly poaching an egg. I put my own little spin on poaching an egg but it has worked every time for me. There are many ways to poach an egg and it may seem like a hard task. It is really simple and takes little practice. My favorite way is to use a large spoon. It gives me more of a disc shape but in my opinion it’s cute. I also just slowly pour an egg in simmering water, always with a little distilled vinegar, or you can have a little fun and start a whirl effect in the water and pour the egg in the center of it. This will help the egg white wrap around the yolk. Don’t be scared to experiment when cooking! You can make this recipe your own! Add roasted tomatoes, or sausage. There are many ways to make something delicious and healthy!
